Bratwurst Done Right!!

Mvc-UofL031s.jpg (31907 bytes)

Uof L Brats

To make memorable bratwurst tailgate sandwiches, remember to treat these sausages with care. Never, never, never break their skin. Use white cotton/canvas gloves to handle brats on the grill.  Keep a container of cold water near-by so that you can dip your hands before placing them above the coals.   If you are cooking with charcoal, these gloves, can be made to drip on the fire to cool things down or stop flaming.  Remember that nothing tastes better than a bratwurst that has not been pierced or broken. Never touch real brats with anything metal until they are finished cooking.
The night before your tailgate be sure to pre-cook your brats (Johnsonville are best) in beer (Leinenkugel's is great).  Let them simmer for 20 minutes covered mostly by a bottle or two of beer.  Then, not using anything metal, place the brats in a Rubbermaid container in the fridge.  On game day just pup the container into new plastic cooler and you're ready to go.
